For years I’ve been straddling the fence. I’m a flexitarian, switching back and forth from a vegetarian to vegan, with the occasional meat eating. But recently, I read an article on stv.tv, ‘We tried to go vegan for January and this is what happened’ (1). It seemed to turn on a lightbulb. My thoughts, why not give it a try for a month.
Another birthday had passed, and I realized I’m not getting any younger. At this point in my life, I could use the health benefits of a plant-based diet. However, my biggest obstacle will be the hubby. He likes his bacon and eggs for breakfast, and I like my peach mango Silk soy yogurt and fruit. Don’t get me wrong, I don’t mind him cooking his breakfast, but I usually cook dinner. This will be a challenge.
So here I am starting my vegan journey. Many people think it costs a lot to be vegan. It doesn’t. Eatting a healthy organic plant-base diet doesn’t have to break the bank. I’m sure there’ll be successes and failures, but anything worth doing isn’t easy. So let see where this goes. I’m up for it.
